 1. After the animal is slaughtered, the meat temperature has not yet dissipated, and it is soft and has little elasticity. After a certain period of time, the stretchability of the meat disappears and the meat becomes stiff. This phenomenon is called rigor mortis. At this time, it is not easy to cook after heating, the water retention is poor, and the weight loss after heating is large, which is not suitable for processing meat products.
  2. With the extension of storage time, rigor mortis is relieved, and the meat becomes soft after self-decomposition. At the same time, the water retention and flavor are improved. This process is called meat maturation.
  3. When mature meat is stored under adverse conditions, it decomposes and deteriorates through the action of enzymes and microorganisms, which is called meat corruption.
  4. According to research, the longer the time from the beginning of rigor mortis to the end of maturation, the longer the meat stays fresh. Therefore, extending the duration of the rigor mortis stage is the key to meat preservation and is of great significance to maintaining the quality of meat.
